Nutmeg

The seed of the Myristica fragrans evergreen tree is nutmeg. A vivid red aril known to spice traders as mace covers the inner seed. It is primarily manually harvested. The color of mace frequently changes from a bright red to a yellow-orange as it ages. Up to two months are required for the nutmegs to dry on drying racks before another layer of shell is peeled off and the priceless nut is finally revealed.
